Alain Dediès harvests around 25 tonnes of hazelnuts a year from 8,000 trees on 12 hectares. His orchards have been growing for over 30 years in the commune of Villesèquelande, north-west of Carcassonne.
Whole hazelnuts are sold in grocery shops and markets. Shelled hazelnuts are sold to chocolate makers looking for quality hazelnuts.
He also makes hazelnut oil and has developed a range of cosmetics.
Every part of the hazelnut is used - even the shells are sold as mulch for flower beds!
