The six hectares of the Malys-Anne estate are planted on terraces on the shale plateaux of the Montagne Noire where the fertility is very low, and are tended without the use of chemical fertilisers or weedkillers.
The grapes from each unique plot, swept by the 'Cers' and 'Marin' winds that bend the vines towards the ground, wait until October to be harvested by hand. It is a process of patience and waiting so that the grapes reach optimum ripeness.
The quest for a truly terroir-based wine requires meticulous work in the cellar. A temperature-controlled maceration lasting forty days on average, with a daily punch down and slight oxidation-reduction, enhances the character of the wine.
We keep sulphiting to a minimum to preserve the authenticity of our wines. Some of our red wines are not filtered, which can result in a deposit.
