In the second half of the 19th century, the Gau family left the Pyrenees for the more hospitable area of Languedoc. Pierre was the first to settle on this land and plant vines. From 1922 onwards, Alfred fitted out the main winery and developed the vineyard.

From 1950 onwards, Jean extended the estate and diversified into rice and apple production. He then helped his sons, Yves and Jacques, an oenologist and agronomist, to modernise the estate, equipping it with the latest technology. Today, Jacques Gau and his team preside over an estate of 60 hectares of vines and 15 hectares of apple trees, with the sole aim of producing top-quality wines.
